I didn’t do that well at predicting the banana consumption in the household this week, so we had plenty of extras for banana bread. Here’s a good recipe. I prefer to have this slightly undercooked so the loaf is extra moist and squishy. Feel free to experiment.

1 1/2 C mashed bananas (about 3) 1/4 C plain yogurt 2 eggs, beaten 6 T butter, melted 2 C flour 3/4 C sugar 3/4 t baking soda 1/2 t salt 1 t vanilla 1 T cinnamon 1/2 C chocolate chips 1 1/4 C toasted walnuts, chopped coarsely (optional) 1/4 C flax meal (optional)
- Preheat oven to 350°F
- Grease loaf pan.
- Mix wet and dry ingredients separately. Fold together
- Bake about 55 minutes, or until a knife inserted in the center
comes out fairly clean.- Cool in pan 5 minutes, transfer to wire rack
- Enjoy!

At 23 cents a pound (which is what bananas are at my local market) you could make a lot fo cheap banana bread around here 🙂
I’ve never been a fan of chocolate in my banana bread. I’m all for the walnuts, though.
I always underestimate my family’s banana consumption and rarely have any left for bread. They REALLY like bananas.
Someday, through an amazing feat of dexterity, I’ll manage to grab a couple of bananas before they do, and then watch out, I’ll be a baking fool.
It’s interesting to see yogurt in this. Banana bread needs something to moisten it, and I’m betting the yogurt does an excellent job of that. In mine, I use applesauce, and that works well, too. 🙂
